Stir-fried pork with peanut and chilli

Pork strips are cut from the leg – ask the butcher to cut the strips against the grain of the meat as they’ll be much tenderer.

ENGLISH, AFRIKAANS BELOW STIR-FRIED PORK WITH CHILLI AND PEANUTS

Ingredients

  • 500g pork stir-fry strips
  • salt and freshly ground pepper
  • vegetable oil for stir-frying
  • 10ml sesame oil
  • 3 garlic cloves, finely chopped
  • 3cm ginger, finely chopped
  • 10ml smoked chilli flakes
  • 1 bunch spring onions, cut into 4cm lengths
  • 2 red peppers, cut into strips
  • 125g sugar snap peas
  • 3 carrots, cut into batons
  • 1 red onion, thinly sliced
  • 1 baby cabbage, thickly sliced
  • 125ml salted giant peanuts, roughly chopped
  • 80ml soy sauce
  • 500g ready-cooked egg noodles 

Method

Season the pork with salt and pepper and toss to mix.

Heat a little vegetable oil in a wok until smoking hot and toss in the pork with half the sesame oil, garlic, ginger and chilli. Stir-fry vigorously for a few minutes until the meat is almost done. Remove and set aside.

Add a little more vegetable oil to the wok. Add the vegetables and remaining sesame oil, garlic, ginger and chilli and stir-fry until almost done.

Return the meat to the wok, add the peanuts, soy sauce and noodles, and stir-fry for another minute.

Serve immediately.

 

Tip
Pork neck steaks are also excellent for stir-fries. / Replace the peanuts with cashew nuts if you like.
